Chef El’s take on one of Filipino’s classic street food will have you reliving fond memories of making “tusok-tusok” of fishballs. This time, we’ll deliver it right to your doorsteps frozenly packed while retaining its freshness and crunchy taste. Easy to cook and just dip it on a flavorsome sauce to elevate the taste of what you used to have from the neighborhood fishball vendor in the Philippines.

A delicious street food snack, fish balls go very well with sweet and spicy sauces. The basic ingredients for making fish balls are fish meat mixed with chopped vegetables, beaten eggs, cornstarch and spices. The fish balls are served with three types of dipping sauces: spicy - vinegar, diced onions, water and garlic; sweet - corn starch, banana ketchup, sugar, and salt; and sweet and sour – the sweet sauce but with added hot chilies

Pan-Fry :  (Time: 12-15 minutes)

  • Heat up a nonstick pan on medium heat and add a tablespoon of oil, let it heat for a couple of minutes.
  • Place the frozen fish balls on the pan and allow them to sear for 5-7 minutes.
  • Flip them to sear on the other side for 5-7 minutes until the chicken is cooked.
  • Once cooked, remove carefully onto a paper towel with a slotted spoon.

Deep Fry : (Time: 12-15 minutes)

  • Place a deep-frying pan on medium heat. Add enough oil to completely submerge the fishballs.
  • Heat oil to 170℃. To test, slide a frozen fish ball in the oil and if it sizzles, then you are on the right track.
  • Once the oil is hot, slide the remaining frozen fish balls in gently, one by one, into the oil. Gently stir and turn them over occasionally until it is golden-brown on all sides.
  • Once cooked, remove carefully onto a paper towel with a slotted spoon.

Air Fryer : (Time: 12-18 minutes)

  • Spray the basket of an air fryer with cooking spray and set aside.
  • Place the frozen fish ball in the fryer basket in a single layer so they are not touching each other.
  • Set the air fryer to 360°C and cook for 10 minutes, then flip the fish tballs with tongs or shake the air fryer basket and cook for 7 minutes more.
  • Once cooked, remove carefully onto a paper towel with the tongs.

Baking in an Oven:  (Time: 15- 20 minutes)

  • Preheat oven to 180°C.
  • While it’s heating spread out the frozen fish balls in single layer onto a baking sheet/tray.
  • Place the baking sheet/tray in the middle rack of the oven and bake for 10 to 14 minutes or until crispy, turning once.
  • Once cooked, remove carefully from the oven onto a paper towel with the help of tongs.

Serving Suggestions:

Enjoy immediately! Serve hot with your favourite dipping sauce.
